Perfect Carolina Mustard Chicken Wings
A Carolina backyard classic — jumbo wings grilled to crispy perfection and finished with a golden honey mustard sauce that's equal parts tangy, sweet, and straight-up addictive.

2 lbs jumbo chicken wings

1 tbsp cornstarch

Marinade

2/3 cup olive oil

2/3 cup coconut aminos

2 tbsp Stevia brown sugar substitute

1 tbsp dijon mustard

½ tsp salt

1 tsp garlic powder
-
1 tsp onion powder

1 tsp pepper

Carolina Mustard Sauce
-
1/2 cup mustard
-
1/4 cup honey
-
1/4 cup vinegar (white or apple cider)

1 tbsp Stevia brown sugar substitute
-
1 tbsp Worcestershire sauce
-
3/4 tbsp ketchup
-
1/2 tsp salt
-
1/2 tsp garlic powder
-
1/2 tsp onion powder
Instructions
Mix marinade ingredients and place wings into a gallon zip log bag. Pour the marinade over the wings making sure they are well coated. Place in the refrigerator for 30 minutes to 4 hours, flipping midway through.
Preheat the grill to 375°F.
Remove wings from the marinade and dry off. Place wings in a clean gallon ziplock bag and add the cornstarch. Mix to combine make sure the wings are well coated.
Place wings on the preheated grill. To insure flats do not over cook, place them on the top rack with the wingettes on the lower rack.
Flip the wings every 15 minutes. The wings should take approximately 40 to 45 minutes. Cook until internal temperature reaches at least 165°F. For best results, cook them until they reach 180-190°F.
Remove from heat, tent with foil to let rest.
While the wings are resting, combine the mustard sauce ingredients into a saucepan and heat over a low heat, stirring well to combine. Remove from heat.
When the wings are rested, add to sauce and toss to coat. Optionally, dip sauce over wings.
Enjoy with your favorite sides and condiments.
Recipe Notes
- According to USDA recommendations, wings are safe to eat once they reach 165°F, but for best results cook them until their internal temperature reaches 180 - 190°F.
- Substitutions for Stevia brown sugar substitute and coconut aminos can be made in a 1:1 ratio with light brown sugar and low sodium soy sauce, if desired.
